Method

Prepare Tofu

    Press Tofu

    Wrap the silken tofu in a clean kitchen towel and place a heavy object on top to press out excess moisture for about 15 minutes.

    Cube Tofu

    Once pressed, carefully cut the tofu into 1-inch cubes.

Cook Pork Sauce

    Sauté Aromatics

    In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and ginger, and sauté for 1-2 minutes until fragrant.

    Cook Pork

    Add the ground pork to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.

    Add Spices

    Stir in the Szechuan peppercorns and doubanjiang. Cook for another 2 minutes until the pork is well coated.

    Combine Liquids

    Pour in the soy sauce and chicken broth, stirring to combine. Bring the mixture to a gentle simmer.

    Thicken Sauce

    In a small bowl, mix cornstarch with water to create a slurry. Add this to the skillet, stirring constantly until the sauce thickens, about 1-2 minutes.

Combine and Serve

    Add Tofu

    Gently fold the cubed tofu into the pork sauce, being careful not to break the tofu. Simmer for additional 2-3 minutes to heat through.

    Garnish and Serve

    Serve hot, garnished with chopped green onions, cilantro, and a drizzle of sesame oil.
