Prepare the Vegetables
Wash and chop all vegetables into bite-sized pieces. Set aside.

Make the Spice Mix
In a small bowl, combine Szechuan peppercorns, dried chili flakes, garlic powder, ginger powder, coriander powder, cumin powder, black pepper, salt, turmeric powder, and sesame seeds. Mix well.

Prepare the Sauce
In another bowl, whisk together Szechuan chili sauce, soy sauce, and vegetable oil until combined.

Wok Toss the Vegetables
Heat a large wok over medium-high heat. Add 1 tablespoon of vegetable oil. Once hot, add the prepared vegetables and stir-fry for about 5 minutes, or until they are tender-crisp.

Add the Spice Mix
Sprinkle the prepared spice mix over the vegetables and stir well to coat everything evenly. Continue cooking for another 2 minutes.

Add the Sauce
Pour the prepared Szechuan chili sauce mixture over the vegetables. Stir-fry for an additional 2-3 minutes until everything is well combined and heated through.
