Prepare the Beef
Cut the beef chuck roast into 2-inch cubes and season with salt and pepper.

Prepare Aromatics
Mince the garlic and ginger. Chop the green onions, keeping the white and green parts separate.
Cooking

Sear the Beef
In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef cubes and sear until browned on all sides, about 5-7 minutes. Remove beef and set aside.

Cook Aromatics
In the same pot, add the minced garlic, ginger, and the white parts of the green onions. Sauté for 2-3 minutes until fragrant.

Add Spices and Sauce
Stir in the Szechuan peppercorns, soy sauce, beef broth, brown sugar, rice vinegar, and sesame oil. Bring to a simmer.

Braise the Beef
Return the seared beef to the pot. Cover and reduce heat to low. Let it braise for about 2 to 2.5 hours, or until the beef is tender.

Thicken the Sauce
In a small bowl, mix cornstarch and water to create a slurry. Stir this into the braising liquid and cook for an additional 5-10 minutes until the sauce thickens.

Serve the Szechuan Braised Beef hot, garnished with the green parts of the green onions. Enjoy with steamed rice or noodles.
