Pork Preparation

    Marinate the Pork

    Cut the pork tenderloin into bite-sized pieces. In a large bowl, combine soy sauce, grated ginger, minced garlic, Chinese five-spice powder, black pepper, and cornstarch. Add the pork pieces to the marinade and toss to coat well. Cover and marinate in the refrigerator for at least 30 minutes.

    Cook the Pork

    Heat a large skillet or wok over medium-high heat and add a splash of oil. Once hot, add the marinated pork pieces and stir-fry until they are golden brown and cooked through, about 8-10 minutes. Remove from heat and set aside.

Sweet and Sour Sauce Preparation

    Make the Sauce

    In a saucepan, combine ketchup, rice vinegar, brown sugar, soy sauce, and water. Bring to a simmer over medium heat. In a small bowl, mix cornstarch with 2 tablespoons of water to make a slurry. Slowly add the slurry to the simmering sauce while stirring continuously until it thickens, about 2-3 minutes.

    Serve the Dish

    Once the pork is cooked and the sauce is ready, drizzle the sweet and sour sauce over the pork and toss to coat. Serve immediately over steamed rice or brown rice.
