Cook the Noodles
Bring a large pot of salted water to a boil. Add the angel hair Singapore rice noodles and cook according to package instructions until tender, usually around 3-5 minutes. Drain and set aside.

Prepare the Protein
If using chicken or shrimp, season with salt and pepper. If using tofu, press it to remove excess moisture and cut it into cubes.

Chop the Vegetables
While the noodles are cooking, slice the bell pepper, julienne the carrot, and chop the green onions. Set all vegetables aside.

Stir-Fry the Protein
In a large wok or frying pan, heat a tablespoon of sesame oil over medium-high heat. Add the prepared chicken or shrimp and stir-fry for 3-4 minutes, until cooked through. If using tofu, stir-fry until golden brown. Remove from the wok and set aside.

Combine Everything
Return the cooked protein to the wok, then add the cooked rice noodles. Pour in the soy sauce and oyster sauce, tossing everything together until well mixed and heated through, about 2 minutes.
Serving

Plate and Garnish
Divide the rice sticks among serving plates. Garnish with chopped green onions, cilantro, and sesame seeds. Serve immediately.
