Rice Cakes Preparation

    Prepare the Rice Mixture

    In a large bowl, combine the cooked rice, salt, cornstarch, and sesame seeds. Mix well until all ingredients are evenly incorporated.

    Form the Rice Cakes

    Using your hands, take portions of the rice mixture and form them into small patties, about 1/2 inch thick.

    Cook the Rice Cakes

    In a frying pan, heat the olive oil over medium heat. Once hot, place the rice cakes in the pan and cook for about 3-4 minutes on each side, or until they are golden brown and crispy. Remove from heat and set aside.

Pickled Veggies Preparation

    Prepare the Vegetables

    Thinly slice the cucumber, carrot, and radishes and place them in a clean jar.

    Make the Pickling Liquid

    In a small saucepan, combine the rice vinegar, sugar, salt, and water. Bring to a simmer over medium heat, stirring until the sugar and salt have dissolved.

    Pickle the Vegetables

    Pour the hot pickling liquid over the sliced vegetables in the jar, making sure they are fully submerged. Let the jar cool to room temperature, then seal and refrigerate for at least 1 hour before serving.
