Prepare the Broth

Combine Ingredients
In a large pot, combine the water, chicken or vegetable broth, gochugaru, soy sauce, sesame oil, minced garlic, grated ginger, and chopped scallions. Bring to a boil over medium-high heat.

Simmer the Broth
Once boiling, reduce the heat to low and let the broth simmer for 15 minutes to allow the flavors to meld.
Cook the Noodles

Prepare Noodles
In a separate pot, bring water to a boil and cook the ramen noodles (or rice noodles for gluten-free) according to package instructions. Drain and set aside.
Assemble the Soup

Combine Broth and Noodles
Once the broth has simmered, add the cooked noodles to the pot. Stir well and let it heat through for about 2 minutes.

Add Toppings
Ladle the soup into bowls and top with slices of cha-sho pork, soft-boiled eggs, nori seaweed, bok choy or spinach, and a sprinkle of sesame seeds.
