Red Braised Tofu Recipe
Golden braised tofu and assorted veggies slow simmered in red sherry sauce. Choice of steamed rice or brown rice.

Preparation

Prepare the Tofu
Press the firm tofu to remove excess moisture. Wrap it in a clean kitchen towel and place a weight on top for about 15 minutes. Cut the tofu into bite-sized cubes.

Chop the Vegetables
Slice the bell pepper, carrot, and zucchini into thin strips. Chop the green onions, separating the green tops from the white parts.

Sauté the Tofu
In a large skillet, heat 1 tablespoon of sesame oil over medium heat. Add the cubed tofu and sauté until golden brown on all sides, about 8-10 minutes. Remove the tofu and set aside.

Cook the Vegetables
In the same skillet, add another tablespoon of sesame oil. Add the white parts of the green onions, bell pepper, carrot, and zucchini. Stir-fry for about 5 minutes until slightly tender.

Make the Sauce
In a bowl, mix the red sherry vinegar, soy sauce, brown sugar, minced garlic, minced ginger, cornstarch, and water until well combined.

Combine and Simmer
Add the sautéed tofu back into the skillet with the cooked vegetables. Pour the sauce over the tofu and vegetables. Stir to coat everything evenly. Reduce heat to low and let it simmer for 10-15 minutes, allowing the flavors to meld.
Serving

Serve with Rice
Serve the red braised tofu and vegetables over a bed of steamed rice or brown rice. Garnish with the green tops of the chopped green onions.
