Prepare the Chicken

    Marinate the Chicken

    In a bowl, combine the minced garlic, soy sauce, sesame oil, and black pepper. Add the chicken thighs, ensuring they are well coated with the marinade. Let it marinate for at least 30 minutes.

    Prepare the Rice

    While the chicken is marinating, rinse the rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low and cover. Cook for about 15-20 minutes or until the water is absorbed and the rice is tender. Remove from heat and let it sit covered for 5 minutes.

Cook the Chicken and Nuts

    Stir-Fry the Chicken

    In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes until cooked through and browned. Remove from the skillet and set aside.

    Toast the Nuts

    In the same skillet, add the slivered almonds and roasted cashews. Stir-fry for about 2-3 minutes until they are golden and fragrant. Remove and set aside with the chicken.

    Cook the Vegetables

    In the same skillet, add a little more oil if needed, then add the sliced bell pepper and julienned carrot. Stir-fry for about 3-4 minutes until they are slightly softened. Return the chicken and nuts to the skillet.

    Combine Everything

    Mix all the ingredients in the skillet together, allowing them to heat through for another 2-3 minutes. Sprinkle with chopped green onions before serving.
