    Prepare the Ingredients

    Cut chicken breast (or shrimp/tofu) into bite-sized pieces. Slice the bell pepper and carrot into thin strips. Chop the green onions and prepare the broccoli and snow peas.

    Cook the Noodles

    Bring a large pot of salted water to a boil. Add the egg wheat noodles and cook al dente according to package instructions (usually about 4-5 minutes). Once cooked, drain and rinse under cold water to stop cooking. Set aside.

    Stir-Fry the Protein

    In a large wok or frying pan, heat 1 tablespoon of sesame oil over medium-high heat. Add the protein of choice (chicken, shrimp, or tofu) and stir-fry for about 5-7 minutes until cooked through. Remove from the pan and set aside.

    Stir-Fry the Vegetables

    In the same pan, add a little more oil if needed and toss in the minced garlic and grated ginger. Stir-fry for 30 seconds until fragrant. Then add the bell pepper, carrot, broccoli, and snow peas. Stir-fry for about 3-4 minutes until the vegetables are tender yet crisp.

    Combine Noodles and Sauce

    Add the cooked egg noodles to the pan with the vegetables. Pour in the soy sauce and oyster sauce, and toss everything together until well combined and heated through (about 2-3 minutes).

    Add Protein and Garnish

    Finally, return the cooked protein to the pan and stir everything together for another minute. Remove from heat and garnish with chopped green onions and sesame seeds before serving.
