Preparation

    Slice the Pork

    Trim the pork tenderloin of any excess fat and slice it into thin strips, about 1/4 inch thick.

    Prepare the Vegetables

    Rinse the bamboo shoots and wood ear mushrooms under cold water. If the wood ear mushrooms are dried, soak them in warm water for 30 minutes, then slice them into strips.

    Mince the Garlic

    Peel and mince the garlic cloves finely.

    Mix the Sauce

    In a small bowl, combine the soy sauce, chili paste, sesame oil, cornstarch, and water. Whisk until smooth and set aside.

    Stir-fry the Pork

    In a large pan or wok, heat 2 tablespoons of oil over medium-high heat. Add the sliced pork and stir-fry for about 5-7 minutes, or until browned and cooked through. Remove the pork from the pan and set aside.

    Cook the Vegetables

    In the same pan, add a bit more oil if necessary and toss in the minced garlic. Sauté for about 30 seconds until fragrant, then add the bamboo shoots and wood ear mushrooms. Stir-fry for an additional 3-4 minutes.

    Combine with Sauce

    Return the cooked pork to the pan with the vegetables. Pour the sauce over the mixture and stir well to combine. Cook for an additional 2-3 minutes, stirring constantly until the sauce thickens.

Serving

    Serve with Rice

    Serve the flaming boar hot over a bed of steamed rice or brown rice, as per your preference. Enjoy your spicy dish!
