Double Mushroom Beef Recipe

Preparation

    Prepare the Mushrooms

    Soak the black wood mushrooms in warm water for 30 minutes until softened. Drain and slice thinly. If using fresh brown wood mushrooms, slice them thinly as well.

    Slice the Beef

    Trim any excess fat from the beef steak and slice it into thin strips, about 1/4 inch thick against the grain.

    Prepare the Rice

    If using brown rice, cook according to package instructions. For steamed white rice, rinse the rice under cold water until the water runs clear, then cook in a rice cooker or on the stovetop.

Cooking

    Stir-Fry the Beef

    Heat a tablespoon of sesame oil in a large skillet or wok over high heat. Add the sliced beef and stir-fry for about 3-4 minutes until browned and nearly cooked through. Remove the beef from the skillet and set aside.

    Cook the Aromatics

    In the same skillet, add a little more sesame oil if needed. Add minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.

    Add the Mushrooms

    Add the sliced brown and black wood mushrooms to the skillet. Stir-fry for about 3-4 minutes until they are tender.

    Combine Everything

    Return the beef to the skillet and add the doubanjiang and soy sauce. Stir-fry everything together for another 2-3 minutes until the beef is cooked through and coated in the sauce.

    Finish with Green Onions

    Add the sliced green onions and stir-fry for an additional minute before removing from heat.
