Pork Preparation

    Marinate the Pork

    In a large mixing bowl, combine soy sauce, hoisin sauce, rice wine vinegar, brown sugar, five-spice powder, minced garlic, grated ginger, and sesame oil. Stir until the sugar dissolves. Add the pork shoulder and ensure it is fully coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

    Roast the Pork

    Preheat your oven to 375°F (190°C). Remove the pork from the marinade and place it on a roasting rack in a baking pan. Reserve the marinade for basting. Roast the pork in the preheated oven for about 1.5 hours, basting with the reserved marinade every 30 minutes, until the internal temperature reaches 145°F (63°C).

    Rest and Slice

    Once cooked, remove the pork from the oven and let it rest for 15 minutes. Then slice it thinly against the grain.

    In a small bowl, mix together the toasted sesame seeds, Dijon mustard, and honey. Adjust the quantities to taste, if necessary.
