Method

Preparation

  1. 1

    Prepare the Ingredients

Thinly slice the beef and cube the firm tofu. Slice the carrot and mushrooms, and chop the green onions.

  2. 2

    Mince Garlic and Grate Ginger

Mince the garlic cloves and grate the ginger, setting them aside for later use.

Cooking

  1. 3

    Cook the Beef

In a large pot, heat a tablespoon of sesame oil over medium heat. Add the sliced beef and cook until browned, about 3-4 minutes.

  2. 4

    Add Aromatics

Add the minced garlic and grated ginger to the pot, stirring for an additional minute until fragrant.

  3. 5

    Add Broth and Vegetables

Pour in the vegetable broth and bring to a boil. Once boiling, add the sliced carrots, mushrooms, and soy sauce. Reduce heat and let simmer for 10 minutes.

  4. 6

    Add Tofu

Gently add the cubed tofu to the pot and simmer for an additional 5 minutes, allowing the tofu to absorb the flavors.

  5. 7

    Season the Soup

Season with salt and pepper to taste. Stir in the chopped green onions just before serving.
