Preparation

    Prepare the Chorizo

    In a skillet, cook the homemade chorizo over medium heat until browned and fully cooked. Set aside.

    Marinate the Flank Steak

    Rub the flank steak with olive oil, garlic powder, cumin, chili powder, salt, and black pepper. Let it marinate for at least 30 minutes.

    Prepare the Vegetables

    Slice the cactus, onion, and jalapeños. Drizzle with olive oil and season with salt and pepper.

Cooking

    Grill the Flank Steak

    Preheat the grill to medium-high heat. Grill the flank steak for about 6-7 minutes on each side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing.

    Grill the Vegetables

    On the same grill, add the cactus, onions, and jalapeños. Grill until tender and slightly charred, about 3-4 minutes per side.

    Cook Rice and Beans

    In a saucepan, cook the white rice according to package instructions. Heat the black beans in a separate pot until warm.

Serving

    Plate the Dish

    Slice the flank steak and serve it alongside the grilled chorizo, cactus, grilled onions, and jalapeños. Add a side of rice and beans.
