    Prepare Sweet Potato Fries

    Preheat the oven to 425°F (220°C). Toss the sweet potato fries with olive oil, paprika, salt, and black pepper. Spread them out in a single layer on a baking sheet and bake for 25-30 minutes, flipping halfway through, until golden and crispy.

    Cook the Salmon

    Season the salmon fillets with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the salmon skin-side down and cook for about 4-5 minutes until the skin is crispy. Flip the salmon and cook for an additional 3-4 minutes, or until cooked to your liking.

    Prepare Garlic Butter Sauce

    In the same skillet, lower the heat to medium. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the butter and lemon juice, stirring until the butter is melted and combined.

    Sauté Spinach

    In another skillet, heat a small amount of olive oil over medium heat. Add the fresh spinach and sauté until wilted, about 2-3 minutes. Season with salt and pepper to taste.

    Serve

    Plate the salmon fillets, drizzle with garlic butter sauce, and serve alongside the sautéed spinach and sweet potato fries. Garnish with chopped parsley.
