    Prepare the Fries

    Wash and cut the potatoes into thick strips. Soak them in cold water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat oil in a deep fryer or heavy pan to 350°F (175°C). Drain and dry the potatoes, then fry in batches until golden brown and crispy, about 5-6 minutes. Remove and drain on paper towels, seasoning with salt.

    Cook the Steak

    Season the NY strip with salt and black pepper. Heat a skillet over medium-high heat and add a tablespoon of olive oil. Cook the steak for about 4-5 minutes on each side for medium-rare. Add herb butter during the last minute of cooking and baste the steak.

    Make Black Garlic Aioli

    In a small bowl, mix mayonnaise with black garlic, adding salt and pepper to taste. Adjust consistency and flavor as desired.

    Cook Garlic Prawns (optional)

    In the same skillet used for the steak, add garlic prawns and sauté for about 2-3 minutes until they turn pink and are cooked through. Season with salt and pepper.

    Serve

    Slice the steak and serve with fries on the side. Add a dollop of black garlic aioli on the plate and top with garlic prawns, if using.
