Focaccia Preparation

Activate Yeast
In a small bowl, combine warm water and yeast. Let it sit for about 5-10 minutes until frothy.

Mix Dough
In a large bowl, mix flour and salt. Make a well in the center and add the yeast mixture and 1/4 cup of olive oil. Stir until combined.

Knead Dough
Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.

Shape and Second Rise
Once risen, punch down the dough and transfer it to a greased baking sheet. Stretch it out to fit the pan and make dimples with your fingers. Drizzle remaining olive oil on top, sprinkle with rosemary and coarse sea salt. Let it rise for another 30 minutes.

Bake
Preheat the oven to 425°F (220°C). Bake the focaccia for 20-25 minutes or until golden brown.
