Bone-In Ribeye

    Prepare the Steak

    Take the ribeye steaks out of the fridge and let them sit at room temperature for about 30 minutes. Preheat your grill or a cast-iron skillet over high heat.

    Season the Steak

    Rub both sides of the steak with olive oil, then season generously with salt, black pepper, garlic powder, and fresh rosemary.

    Cook the Steak

    Place the steak on the hot grill or skillet. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let rest for 5-10 minutes before serving.

Duck Fat Potatoes

    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Wash and halve the baby Yukon Gold potatoes.

    Roast the Potatoes

    In a large bowl, toss the halved potatoes with duck fat, minced garlic, salt, and fresh thyme. Spread the potatoes in a single layer on a baking sheet.

    Bake

    Roast in the oven for about 25-30 minutes, or until golden and crispy on the outside and tender inside, stirring halfway through.

Fire Roasted Zucchini Medallions

    Prepare the Zucchini

    Preheat your grill or broiler. Slice the zucchini into 1/2-inch thick medallions.

    Season the Zucchini

    In a bowl, toss the zucchini medallions with olive oil, salt, black pepper, and balsamic vinegar.

    Grill the Zucchini

    Place the zucchini on the grill or under the broiler. Cook for about 3-4 minutes on each side until tender and lightly charred.
