Preparing the Marinara Sauce

    Cook the base

    In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Add tomatoes

    Add the canned plum tomatoes, including their juices, to the saucepan. Stir well.

    Season the sauce

    Add dried oregano, salt, and black pepper. Simmer the sauce on low heat for 15-20 minutes, stirring occasionally.

    Finish the sauce

    Stir in the chopped fresh basil and cook for an additional 5 minutes. Remove from heat and set aside.

Preparing the Calamari

    Clean the calamari

    If not pre-cleaned, clean the calamari by removing the head, innards, and skin. Rinse under cold water and cut into rings.

    Prepare the batter

    In a bowl, mix together the all-purpose flour, cornstarch, salt, and black pepper.

    Heat the oil

    In a deep skillet or frying pan, heat 2 cups of olive oil over medium-high heat until it reaches 350°F (175°C).

    Coat the calamari

    Toss the calamari rings in the batter mixture until fully coated.

    Fry the calamari

    Once the oil is hot, carefully add the battered calamari in small batches. Fry for 2-3 minutes or until golden brown and crispy.

    Drain and serve

    Remove the calamari with a slotted spoon and drain on paper towels. Squeeze fresh lemon juice over the calamari and serve hot with marinara sauce.
