Preparing the Meatballs

    Mix the Meatball Ingredients

    In a large mixing bowl, combine the ground beef, bread crumbs, chopped onion, minced garlic, egg, salt, black pepper, nutmeg, and chopped parsley. Mix well until all ingredients are thoroughly combined.

    Form the Meatballs

    Take a portion of the mixture and roll it into a ball approximately 1.5 inches in diameter. Repeat until all mixture is used. You should have about 20 meatballs.

    Brown the Meatballs

    In a large skillet, heat a tablespoon of olive oil over medium heat. Add the meatballs in batches, making sure not to overcrowd the skillet. Brown on all sides for about 5-7 minutes. Remove and set aside.

Making the Sauerbraten Sauce

    Prepare the Sauce

    In the same skillet used for the meatballs, add the remaining tablespoon of olive oil. Add the beef broth, red wine vinegar, brown sugar, bay leaves, juniper berries, cloves, salt, and black pepper. Bring the mixture to a boil.

    Reduce the heat and let the sauce simmer for about 10 minutes to allow the flavors to meld.

    Carefully add the browned meatballs back into the skillet with the sauce. Cover and let cook for an additional 15-20 minutes, or until the meatballs are cooked through and the sauce thickens.

Serving

    Remove the bay leaves and juniper berries from the sauce. Serve the meatballs hot, drizzled with the rich sauce, and garnish with additional fresh parsley if desired.
