Pretzel Dough Preparation

Activate Yeast
In a large bowl, combine warm water, active dry yeast, and granulated sugar. Stir gently and let it sit for about 5-10 minutes until foamy.

Mix Dough
Add all-purpose flour, salt, and melted unsalted butter to the yeast mixture. Mix until a dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1 hour, or until doubled in size.
Shaping and Boiling Pretzels

Preheat Oven
Preheat your oven to 450°F (230°C). Line two baking sheets with parchment paper.

Prepare Baking Soda Bath
In a large pot, bring 10 cups of water to a boil. Once boiling, whisk in 2 tablespoons of baking soda.

Shape Pretzels
Punch down the risen dough, divide it into 8 equal pieces, and roll each piece into a long rope (about 24 inches). Shape into a pretzel.

Boil Pretzels
Carefully drop each pretzel into the boiling baking soda bath for about 30 seconds. Remove with a slotted spoon and place on the prepared baking sheets.

Bake Pretzels
Bake pretzels in the preheated oven for 12-15 minutes or until golden brown.

In a medium bowl, mix together the shredded cheddar cheese, softened cream cheese, and beer until smooth.

Stir in garlic powder, onion powder, paprika, salt, and black pepper. Mix until well combined.

Serve the warm pretzels with the beer cheese on the side for dipping.
