    Prep the Vegetables

    Wash and chop the red and green bell peppers into bite-sized pieces. Peel and slice the onion. Scrub the potatoes, then dice them into small cubes.

    Prepare the Kielbasa

    Slice the kielbasa into 1/2 inch thick pieces.

    Mince the Garlic

    Peel and mince the garlic cloves.

Cooking

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onions and cook for about 3-4 minutes, until they become translucent.

    Add Peppers and Potatoes

    Add the diced potatoes and bell peppers to the skillet. Stir well to combine and cook for another 5-7 minutes, allowing the vegetables to soften.

    Cook the Kielbasa

    Add the sliced kielbasa and minced garlic to the skillet. Season with salt, black pepper, and paprika. Stir everything together and cook for an additional 10-12 minutes, stirring occasionally, until the kielbasa is heated through and the vegetables are tender.

    Remove from heat, sprinkle with fresh parsley, and serve hot.
