Preparation of Pancakes

Prepare the Potatoes
Peel the potatoes and grate them using a box grater or a food processor. After grating, place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.

Chop the Onion
Finely chop the onion and set it aside.

Mix the Batter
In a large mixing bowl, combine the grated potatoes, chopped onion, eggs, flour, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat. The oil should be hot enough that a small drop of batter sizzles when added.

Cook the Pancakes
Using a spoon or your hands, shape the potato mixture into patties (about 1/4 cup each) and carefully place them into the hot oil. Flatten them slightly with a spatula. Cook for about 4-5 minutes on each side or until golden brown and crispy.

Drain the Pancakes
Once cooked, transfer the pancakes to a plate lined with paper towels to drain excess oil.

While the pancakes are cooking, finely chop the chives.
