Preparing the Schnitzel

Prepare the Pork Loin
Trim any excess fat from the pork loin and slice it into 4 equal pieces. Each piece should be about 0.5 inch thick. Use a meat mallet to pound the pork pieces to an even thickness.

Set up Dredging Station
In three shallow dishes, place flour in the first, beaten eggs in the second, and breadcrumbs mixed with salt and pepper in the third.

Bread the Pork
Dip each piece of pork into the flour, shaking off excess, then into the egg, and finally coat with breadcrumbs. Make sure each piece is well-covered.

Fry the Schnitzel
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the breaded pork pieces in batches, frying for 3-4 minutes on each side until golden brown. Remove and place on paper towels to drain excess oil.

Add Remaining Ingredients
Stir in the tomato paste, chicken broth, thyme, salt, and pepper. Bring to a simmer and cook for 10-15 minutes until the sauce thickens.

Return the chopped bacon to the skillet and stir to combine. Simmer for an additional 5 minutes.
