Cooking Instructions

  1. 1

    Prepare the Tomatoes

Wash the fresh tomatoes under running water. Dice them into small cubes and set aside.

  2. 2

    Prepare the Garlic

Peel the garlic cloves and mince them finely.

  3. 3

    Season the Grouper

In a bowl, combine the grouper fillets with olive oil, minced garlic, salt, and black pepper. Make sure the fillets are evenly coated in the mixture.

  4. 4

    Cook the Grouper

Heat a large skillet over medium-high heat. Add the seasoned grouper fillets and cook for about 4-5 minutes on each side, or until they are golden brown and cooked through. The internal temperature should reach 145°F (63°C).

  5. 5

    Make the Tomato Sauce

In the same skillet, after removing the grouper, add the diced tomatoes. Sauté for about 3-4 minutes until they soften. Squeeze the juice of the lemon over the tomatoes and add fresh basil leaves.

  6. 6

    Combine and Serve

Return the cooked grouper fillets to the skillet with the tomato sauce. Cook for another minute to warm everything through. Serve immediately, garnished with extra basil if desired.
