    Prepare the Chicken

    Cut the boneless chicken thighs into bite-sized pieces. In a bowl, combine the chicken pieces with salt, black pepper, egg, and cornstarch. Mix well until the chicken is coated evenly.

    Prepare the Sauce

    In a separate bowl, mix together the soy sauce, rice vinegar, sugar, minced garlic, grated ginger, red chili flakes, sesame oil, cornstarch, and water. Stir until well combined and set aside.

    Fry the Chicken

    In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the coated chicken pieces in batches, frying until golden brown and cooked through, about 4-5 minutes per batch. Remove the chicken and place it on a paper towel-lined plate to drain excess oil.

    Cook the Sauce

    In the same skillet, remove excess oil, leaving about 1 tablespoon. Add the prepared sauce mixture and bring it to a simmer over medium heat. Cook for about 2-3 minutes until the sauce thickens.

    Add the fried chicken back into the skillet with the thickened sauce. Toss well to coat the chicken evenly with the sauce. Cook for an additional 2 minutes until heated through.

Garnishing

    Remove from heat and sprinkle sesame seeds over the dish. Chop the green onions and sprinkle on top for garnish. Serve hot with steamed rice or fried rice.
