Rinse the fresh grouper fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

In a large skillet, heat the olive oil over medium-high heat. When the oil is hot, carefully add the seasoned grouper fillets. Sear for about 3-4 minutes on each side until golden brown and cooked through. Remove the fish from the skillet and set aside.
