Method

Preparing the Chips

  1. 1

    Cutting the Potatoes

Peel the large potatoes and cut them into thick strips, about 1/2 inch wide.

  2. 2

    Soaking

Place the cut potatoes in a bowl of cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

  3. 3

    Frying the Chips

Heat 4 cups of oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown, about 5-7 minutes. Remove and drain on paper towels, then season with salt.

Preparing the Fish

  1. 4

    Mixing the Batter

In a bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add cold sparkling water until you achieve a smooth batter.

  2. 5

    Battering the Fish

Dip each fish fillet into the batter, allowing excess to drip off.

  3. 6

    Frying the Fish

In the same oil used for the chips, fry the battered fish pieces in batches until golden brown, about 5-6 minutes per side. Remove and drain on paper towels.

Making the Tartar Sauce

  1. 7

    Combining Ingredients

In a small bowl, mix together mayonnaise, finely chopped pickles, capers, lemon juice, Dijon mustard, salt, and black pepper until well combined. Adjust seasoning to taste.

Serving

  1. 8

    Plating the Dish

Serve the crispy fish and chips hot with a side of tartar sauce and lemon wedges.
