Preparing the Chips

Cutting the Potatoes
Peel the large potatoes and cut them into thick strips, about 1/2 inch wide.

Mixing the Batter
In a bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add cold sparkling water until you achieve a smooth batter.

Battering the Fish
Dip each fish fillet into the batter, allowing excess to drip off.

Frying the Fish
In the same oil used for the chips, fry the battered fish pieces in batches until golden brown, about 5-6 minutes per side. Remove and drain on paper towels.

Combining Ingredients
In a small bowl, mix together mayonnaise, finely chopped pickles, capers, lemon juice, Dijon mustard, salt, and black pepper until well combined. Adjust seasoning to taste.
