    Prepare the Ingredients

    Begin by gathering all the ingredients. Rinse the chicken thighs under cold water and pat them dry with paper towels. Slice the bell peppers and onion, and mince the garlic.

    Sear the Chicken

    In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Season the chicken thighs with salt and black pepper. Add the chicken thighs, skin-side down, to the skillet and sear until golden brown, about 5-7 minutes. Flip and cook for another 5 minutes. Remove the chicken from the skillet and set aside.

    Cook the Sausage

    In the same skillet, add the Italian sausage links. Cook until browned on all sides, about 5-6 minutes. Remove the sausages and slice them into bite-sized pieces.

    Sauté the Vegetables

    Add the sliced onion and bell peppers to the skillet. Sauté for about 4-5 minutes until the vegetables are softened. Add the minced garlic and sauté for another minute until fragrant.

    Return the chicken thighs and sliced sausage to the skillet. Add the chicken broth, white wine (if using), red pepper flakes, and dried oregano. Stir to combine.
