Preparation of Chicken

Prep the Chicken
Preheat oven to 400°F (200°C). Season the chicken breasts with salt and black pepper on both sides.

Dredge the Chicken
Set up a dredging station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with grated Parmesan cheese. Dip each chicken breast first in flour, then in egg, and finally in the breadcrumb mixture, ensuring an even coating.

Fry the Chicken
In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken breasts and cook until golden brown on both sides, about 4-5 minutes per side. Transfer the fried chicken to a baking dish.

Add Tomatoes and Seasoning
Stir in crushed tomatoes, dried oregano, dried basil, sugar, salt, and black pepper. Simmer the sauce for about 10-15 minutes to let the flavors meld.

Finish the Sauce
Stir in the chopped fresh basil, and remove from heat.
Assembly and Baking

Assemble the Dish
Pour the tomato sauce evenly over the fried chicken breasts in the baking dish. Top each piece with shredded mozzarella cheese.

Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the cheese is melted and bubbly.
