    Season the Chicken

    In a large bowl, season the chicken thighs with salt and black pepper, ensuring they are evenly coated.

    Prep Vegetables

    Slice the red and green bell peppers, and onion. Mince the garlic and set aside.

Cooking

    Sear the Chicken

    Heat olive oil in a large skillet over medium-high heat. Add chicken thighs skin-side down and sear until golden brown, about 5-7 minutes. Flip and sear the other side for another 5-7 minutes. Remove chicken and set aside.

    Sauté the Vegetables

    In the same skillet, add minced garlic, sliced onions, red, and green bell peppers. Sauté for about 5 minutes until the vegetables are tender.

    Add Remaining Ingredients

    Stir in diced tomatoes, chicken broth, red wine (if using), and crushed red pepper flakes into the vegetable mixture. Bring to a simmer.

    Combine and Cook

    Return the seared chicken thighs to the skillet, nestling them in the sauce. Cover and simmer for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C).

    Finish and Serve

    If using, stir in capers and black olives just before serving. Garnish with fresh parsley and serve hot.
