    Prepare the Chicken

    Begin by lightly pounding the chicken breasts to an even thickness of about 1/2 inch. This will help them cook evenly.

    Season and Dredge

    Season the chicken breasts with salt and black pepper on both sides. Dredge each piece in flour, shaking off the excess.

    Prepare the Egg Mixture

    In a bowl, whisk together the eggs and water until well combined. This will be used for coating the chicken.

Cooking the Chicken

    Heat the Oil

    In a large skillet, heat the olive oil over medium heat until shimmering.

    Coat and Cook

    Dip each floured chicken breast into the egg mixture, allowing excess to drip off. Place in the skillet and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and keep warm.

Sauce Preparation

    In the same skillet, reduce heat to medium-low. Add the butter and allow it to melt. Then pour in the chicken broth and lemon juice, scraping up any brown bits from the bottom of the skillet.

    Simmer the sauce for about 5 minutes until slightly thickened. Stir in chopped parsley before serving.
