    Prep the Chicken

    Pat the chicken thighs dry with paper towels, then season generously with salt and black pepper on both sides.

    Chop Vegetables

    Dice the onion and bell peppers. Mince the garlic cloves.

Cooking

    Sear the Chicken

    In a large skillet or Dutch oven, heat olive oil over medium-high heat. Add the chicken thighs skin-side down and sear for about 5-7 minutes until golden brown. Flip and sear the other side for an additional 5 minutes. Remove the chicken and set aside.

    Sauté Vegetables

    In the same skillet, add chopped onion and bell peppers. Sauté for about 5 minutes until they start to soften. Add minced garlic and cook for another minute until fragrant.

    Add Tomatoes and Herbs

    Pour in the canned crushed tomatoes and chicken broth. Stir in dried oregano, dried basil, and additional salt and pepper to taste. If using, add red wine.

    Simmer the Chicken

    Return the seared chicken thighs to the skillet. Cover and let simmer on low heat for about 30-35 minutes, or until the chicken is cooked through and tender.

Serving

    Garnish and Serve

    Once the chicken is cooked, remove from heat. Garnish with chopped fresh parsley and grated Parmesan cheese before serving. Enjoy your Chicken Cacciatore with pasta or crusty bread.
