Pork Loin Preparation

Prepare the Pork Loin
Preheat your oven to 375°F (190°C). Pat the pork loin dry with paper towels and place it on a cutting board.

Season the Pork
In a small bowl, mix the olive oil, caraway seeds, minced garlic, salt, black pepper, and fresh thyme. Rub this mixture all over the pork loin, ensuring it is evenly coated.

Roast the Pork
Place the seasoned pork loin in a roasting pan and roast in the preheated oven for about 1 hour, or until the internal temperature reaches 145°F (63°C).

Rest the Pork
Once cooked, remove the pork loin from the oven and let it rest for 15 minutes before slicing.
Madeira Jus Preparation

Add Madeira Wine
Pour in the Madeira wine and bring to a simmer. Cook for about 5 minutes to reduce the wine slightly.

Add Pork Stock
Add the pork stock and thyme to the saucepan. Simmer for an additional 10-15 minutes until the sauce thickens slightly.

Season the Jus
Season the jus with salt and black pepper to taste. Strain the sauce through a fine-mesh strainer if desired for a smoother texture.
