Cake Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large mixing bowl, sift together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until well combined.

Combine Mixtures
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Stir in the boiling water until the batter is smooth.

Bake the Cakes
Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Cool the Cakes
Remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
Assembling the Cake

Prepare Filling
While the cakes are cooling, prepare the cherry filling by mixing the cherry pie filling and fresh cherries in a bowl.

Make Whipped Cream Frosting
In a large mixing bowl, combine heavy whipping cream, powdered sugar, and vanilla extract. Beat with an electric mixer on high speed until stiff peaks form.

Layer the Cake
Once the cakes are completely cool, place one layer on a serving plate. Spread half of the cherry filling over the first layer, then add a layer of whipped cream frosting.

Add Second Layer
Place the second cake layer on top. Spread the remaining cherry filling on top of the second layer followed by another layer of whipped cream frosting.

Garnish the Cake
Top the cake with chocolate shavings and garnish with fresh cherries. Chill in the refrigerator for at least 30 minutes before serving.
