For the Bacon

    Prepare the Marinade

    In a bowl, combine IPA beer, honey, black pepper, and salt. Mix well until honey is dissolved.

    Marinate the Bacon

    Place the thick-cut bacon in a shallow dish and pour the marinade over it. Cover and refrigerate for at least 1 hour, preferably overnight.

    Cook the Bacon

    Preheat your oven to 375°F (190°C). Line a baking sheet with foil. Place the marinated bacon on the baking sheet and bake for 25-30 minutes, or until crispy, flipping halfway through. Brush additional marinade over bacon during the last 10 minutes of cooking for extra glaze.

For the Napa Cabbage Salad

    Prepare the Napa Cabbage

    Wash and chop the Napa cabbage into thin strips. Place in a large salad bowl.

    Add Mandarins and Scallions

    Drain the mandarin oranges and add them to the bowl. Chop the scallions and add them as well.

    Make the Dressing

    In a small bowl, whisk together olive oil, rice vinegar, honey, salt, and black pepper to create the dressing.

    Combine the Salad

    Pour the dressing over the cabbage mixture and toss until everything is well coated. Adjust seasonings with salt and black pepper to taste.
