Dough Preparation

Activate Yeast
In a small bowl, combine warm water (about 110°F) and sugar. Sprinkle the active dry yeast over the water and let it sit for about 5–10 minutes until it becomes frothy.

Mix Dough
In a large mixing bowl, combine the all-purpose flour and salt. Once the yeast is activated, add it along with the melted butter to the flour mixture. Stir until a rough dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 5–7 minutes until the dough is smooth and elastic.

Let Dough Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Preheat Oven
Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.

Shape Pretzels
Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope (about 24 inches long), then twist it into a pretzel shape.
Baking Soda Bath

Prepare Bath
In a large pot, bring the 10 cups of water to a boil. Once boiling, carefully add the baking soda. The mixture will bubble up.

Dip Pretzels
Using a spatula, gently lower each pretzel into the boiling baking soda bath for about 30 seconds. Remove and place on the prepared baking sheet.
