    Prepare the Ingredients

    Start by chopping the bok choy, eggplant, and carrot into bite-sized pieces. Mince the garlic and grate the ginger.

    Cook the Soba Noodles

    Bring a pot of water to a boil and cook the soba noodles according to the package instructions. Drain and set aside.

    Stir-Fry the Vegetables

    In a large wok or frying pan, heat the chili oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant. Add the chopped eggplant and carrot, stir-frying for about 5 minutes until they start to soften.

    Add Bok Choy

    Add the bok choy to the pan and stir-fry for an additional 2-3 minutes until it wilts.

    Combine with Noodles

    Add the cooked soba noodles to the vegetable mixture. Pour in the soy sauce and toss everything together to combine. Cook for another 2 minutes.
