Prepare the Pork Belly
Preheat the oven to 300°F (150°C). Score the skin of the pork belly in a crisscross pattern, being careful not to cut into the meat. Rub salt and black pepper all over the pork belly.

Sear the Pork Belly
In a large oven-safe skillet, heat olive oil over medium-high heat. Place the pork belly skin side down and sear until golden brown, about 5-7 minutes. Flip and sear the other side for another 5 minutes.

Prepare the Soy Caramel
In a bowl, mix the soy sauce, brown sugar, and apple cider vinegar. Pour the mixture over the seared pork belly.

Bake the Pork Belly
Cover the skillet with aluminum foil and transfer it to the oven. Bake for about 2-2.5 hours, or until the pork is tender.

Glaze the Pork Belly
Remove the foil and increase the oven temperature to 400°F (200°C). Bake for an additional 20-30 minutes, or until the skin is crispy and the sauce is caramelized.

Prepare the Apple Purée
While the pork is baking, make the apple purée by cooking peeled and chopped apples in a small pot with a little water over medium heat until soft. Blend until smooth and set aside.

Serve
Once the pork belly is done, let it rest for 10 minutes before slicing. Serve with apple purée, drizzled with soy caramel, and garnish with frisée lettuce.
