Ingredients: 1 unit Whole branzino; 1 to taste Salt; 1 to taste Black pepper; 1 cup Vegetable oil; 400 ml Coconut milk; 500 ml Chicken or vegetable broth; 2 stalks Lemongrass stalks, cut and smashed; 1 unit Black lime (dried lime), whole; 1 inch Galangal, sliced; 2 tbs Fish sauce; 1 tbs Fresh cilantro, chopped; 1 to taste Thai chili, sliced

Rinse the whole branzino under cold water and pat dry. Season the inside and outside of the fish with salt and black pepper.

Clean and Season the Branzino

In a large skillet, heat the vegetable oil over medium-high heat until hot.

Heat the Oil

Carefully add the branzino to the hot oil and fry for about 5-7 minutes on each side, or until crispy and golden brown. Remove and set aside.

Fry the Fish

In a large pot, combine the coconut milk, chicken or vegetable broth, smashed lemongrass, black lime, sliced galangal, and fish sauce.

Combine Ingredients

Bring the mixture to a simmer over medium heat. Let it simmer for about 15 minutes to infuse the flavors.

Simmer the Broth

Add the chopped cilantro and sliced Thai chili to the broth. Stir well and remove from heat.

Finish the Broth

Place the crispy branzino on a serving platter and ladle the hot Thai broth around it. Serve immediately.
