Steak

Bearnaise Sauce

Method

Cooking the Steak

  1. 1

    Prepare the Steak

Remove the hanger steak from the refrigerator and let it sit at room temperature for about 30 minutes. Season both sides generously with salt and black pepper.

  2. 2

    Cook the Steak

Heat olive oil in a skillet over medium-high heat. Once hot, add the steak and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let it rest for 5-10 minutes before slicing.

Making the Fries

  1. 3

    Prepare the Potatoes

Peel the russet potatoes and cut them into thin strips. Soak in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

  2. 4

    Fry the Potatoes

Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels, then season with salt.

Making Bearnaise Sauce

  1. 5

    Prepare the Bearnaise

In a small saucepan, combine shallots, white wine vinegar, and a few tablespoons of water. Cook over medium heat until reduced. Let it cool slightly.

  2. 6

    Emulsify the Sauce

In a bowl, whisk together the egg yolks and the reduced shallot mixture. Place the bowl over a pot of simmering water, whisking constantly until thickened. Gradually whisk in melted butter until the sauce is smooth. Stir in chopped tarragon, salt, and pepper.
