Preparation

    Prepare the Fruits

    Peel and pit the peaches and apricots. For melon, slice in half, remove seeds, and scoop out the flesh. Chop all fruits into smaller pieces.

    Make the Syrup

    In a saucepan, combine water and sugar. Heat over medium heat, stirring until the sugar dissolves completely. Remove from heat and let cool slightly.

    Blend the Fruits

    In a blender or food processor, combine the prepared fruit, rose water, lemon juice, and the cooled sugar syrup. Blend until smooth.

    Chill the Mixture

    Pour the blended mixture into a bowl and refrigerate for at least 2 hours until it is well chilled.

Freezing

    Freeze the Sorbet

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency. Transfer to a lidded container and freeze for at least 4 hours until firm.
