Tofu Preparation

    Marinate the Tofu

    Press the tofu to remove excess moisture, then cut it into thick slices. In a bowl, mix soy sauce, maple syrup, smoked paprika, garlic powder, and black pepper. Marinate the tofu in this mixture for at least 30 minutes.

    Smoke the Tofu

    Preheat your smoker to 225°F (107°C). Place the marinated tofu on the smoker rack and smoke for about 1 hour, or until it has absorbed a smoky flavor.

Fried Wild Rice

    Cook the Wild Rice

    In a pot, combine wild rice and water. Bring to a boil, then reduce heat, cover, and simmer for about 40-45 minutes until the rice is tender and water is absorbed. Fluff with a fork.

    Fry the Rice

    In a large skillet, heat vegetable oil over medium heat. Add chopped green onions and diced carrots, sauté for 3-4 minutes. Add cooked wild rice and soy sauce, stir-fry for another 5 minutes.

Mustard Greens

    Sauté Mustard Greens

    In a separate skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds. Add mustard greens and salt, cooking until wilted, about 5-7 minutes.

Assembly

    Plate the Dish

    On a plate, layer the fried wild rice, top with the smoked tofu, sautéed mustard greens, and shiitake mushrooms. Drizzle with xo sauce and sprinkle togarashi seasoning on top.
