Preparation

    Prep the Figs

    Preheat the oven to 400°F (200°C). Cut the figs in half and place them cut side up on a baking sheet. Drizzle with olive oil and sprinkle with sea salt.

    Roast the Figs

    Roast the figs in the preheated oven for 15-20 minutes, until soft and caramelized.

    Prepare Goat Cheese Mixture

    In a bowl, mix together the goat cheese, dried lavender, and fennel pollen until well combined.

    Make Spiced Honey

    In a small saucepan, combine honey, cinnamon, and ground cardamom. Heat gently until warm and mixed well.

    Prepare Pistachio Financier Batter

    Melt the unsalted butter in a saucepan and let it cool slightly. In a bowl, mix almond flour and powdered sugar. Add the egg whites and the melted butter, mixing until combined. Fold in the chopped pistachios.

    Bake the Financiers

    Spoon the batter into a greased financier mold or mini muffin tin and bake at 375°F (190°C) for 10-12 minutes until golden brown.

Assembly

    Assemble the Dish

    Place the roasted figs on a serving platter. Add a dollop of the goat cheese mixture on top of each fig. Drizzle with spiced honey and serve alongside the pistachio financiers.
