Cook the Pappardelle
In a large pot of salted boiling water, cook the pappardelle according to package instructions until al dente. Drain and reserve.

Sauté the Rabbit
In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the diced rabbit meat and cook until browned on all sides, about 6-8 minutes.

Add Ingredients
Stir in the chopped Castelvetrano olives, oven dried tomatoes, and fresh thyme. Season with salt and black pepper to taste. Cook for another 3-5 minutes until everything is heated through.

Combine with Pasta
Add the cooked pappardelle to the skillet with the rabbit and olive mixture. Toss well to combine and coat the pasta with the sauce.

Serve
Remove from heat and serve immediately, garnished with grated Parmesan Reggiano.
