Make the Funnel Cake

    Combine Dry Ingredients

    In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk to combine.

    Mix Wet Ingredients

    In another bowl, whisk together the eggs, milk, and vanilla extract until well combined.

    Combine Wet and Dry Mixtures

    Pour the wet ingredients into the dry ingredients and stir until just combined. The batter will be slightly lumpy.

    Heat Oil

    Heat the vegetable oil in a deep fryer or large pot to 375°F (190°C).

    Fry the Batter

    Using a funnel or squeeze bottle, drizzle the batter into the hot oil in a circular motion to form a lattice pattern.

    Cook the Funnel Cake

    Fry the cake for about 2-3 minutes on each side or until golden brown. Remove from oil and drain on paper towels.

Serve and Garnish

    Place the funnel cake on a serving plate and top with blackberries, blueberries, and candied Buddha's hand.
