Caramelize the Onion
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes until the onion is golden brown and caramelized. Set aside.

Prepare the Egg Mixture
In a large bowl, whisk together the eggs, chopped thyme, salt, and black pepper. Stir in the diced tomato and caramelized onions.

Add Cheese
Crumble the Sonoma goat cheese into the egg mixture and gently fold to combine.

Cook the Frittata
In the same skillet, add the remaining tablespoon of olive oil and heat over medium. Pour the egg mixture into the skillet and cook for about 5 minutes, until the edges begin to set.

Finish Cooking
Transfer the skillet to a preheated oven at 375°F (190°C) and bake for 15-20 minutes, or until the frittata is puffed and cooked through.

Remove from the oven, let it cool for a few minutes, then slice and serve warm.
