    Prepare the Dough

    In a large bowl, combine warm water, yeast, and sugar. Let it sit for about 5-10 minutes until frothy. Add flour, salt, and olive oil. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Place it in a greased bowl, cover, and let it rise for about 1 hour until doubled in size.

    Prepare Tomato Compote

    Chop tomatoes and heat olive oil in a saucepan over medium heat. Add tomatoes, salt, and pepper. Cook for about 15 minutes until thickened. Add sugar and stir to combine. Remove from heat.

    Shape the Focaccia

    Once the dough has risen, punch it down and transfer it to a greased baking sheet. Stretch and press the dough into a rectangle about 1 inch thick. Create dimples in the surface using your fingers.

    Add Toppings and Bake

    Spread the tomato compote evenly over the focaccia. Tear the buffalo mozzarella into pieces and scatter them on top, along with fresh basil leaves. Drizzle with olive oil. Let it rest for another 20-30 minutes.

    Preheat the oven to 425°F (220°C). Bake the focaccia for 20-25 minutes or until golden brown. Let it cool slightly before slicing and serving.
