Prepare Duck Confit

    Season the Duck

    Rub salt, garlic, thyme, and bay leaves over the duck legs. Let them sit in the fridge for at least 24 hours.

    Cook the Duck

    Preheat the oven to 225°F (107°C). Place the duck legs in a baking dish and cover with duck fat. Cook for 2 to 3 hours until tender. Cool and shred the meat.

Prepare Chilaquiles

    Combine Mole and Broth

    In a saucepan, heat the mole sauce and chicken broth over medium heat until combined and warmed through.

    Assemble the Chilaquiles

    In a large serving dish, layer tortilla chips, shredded duck confit, and mole mixture. Top with sliced avocado and fried eggs.

    Garnish and Serve

    Garnish with fresh cilantro and serve with lime wedges on the side.
